Old Brown Dog is proud we are the largest supplier of Red Emperor in WA, and that all of our target species are trap caught and processed to our Cold Chain procedure to deliver freshness, taste and quality with every catch..

Red Emperor

(Lutjanus sebae)
One of our most iconic species, the Red Emperor is a juicy, succulent fish that needs little introduction. With a texture of its own and versatile enough to be cooked whole, filleted, served baked, steamed, fried or barbecued. Fantastic poached on fresh buttered toast.

Saddletail Snapper

(Lutjanus malabaricus)
Big, fleshy fillets full of firm, snowy white flesh make the saddletail a welcome addition to larger tables, and the mild, moist taste makes them a favourite with everyone. Simply pan fry a couple of good thick steaks, or bake, poach or steam your fillets for a healthy, delicate taste.

Blue Spot Emperor

(Lethrinus punctulatus)
A firm piece of Blue Spot Emperor with a sweet flavour is ideal for steaming, but can also be grilled or panfried, or wrapped in foil for the barby. A very good source of iodine.

Goldband Snapper

(Pristipomoides multidens)
A favourite with chefs. A moderately firm flesh that retains it’s moisture and a unique texture. Very versatile and can be steamed, fried, baked or grilled. A great fish to start with if you are new to cooking fish , also for the seasoned gourmet.

Rankin Cod

(Epinephelus multinotatus)
Look for the fish with the protruding forehead. This indicates a reserve of stored fat in the fish for that wonderful aroma of sizzling omega 3 fish oil. Sought after for their delicious taste and the versatility of their coarse, flaky flesh. Steam, bake or fry the fish whole, or marinate the fillets and bake, barbecue or grill them.

Coral Trout

(Plectropomus maculatus)
Valued for their good looks as much as their sweet, subtle flavours, Coral Trout go very well with Asian flavours, and can be baked, steamed, grilled or poached. Be careful, the delicate flesh of the Coral Trout is easily damaged and we take particular care of this fish when handling.
